Fleur de sel (saltflower)
The queen of the Guérande salt-marshes, saltflower is carefully harvested every day by salt-marsh workers using a tool known as a ‘lousse’ on the surface of the waters. It has reigned supreme for generations in our kitchens, used to season cooked meals or for tomatoes simply dipped in salt. It’s delicate in flavour, as its poetic name suggests. We have chosen to work with a traditional salt-marsh worker from the Guérande region as our supplier.
